Pro Tips
- Bring the cream cheese and eggs to room temperature so the batter mixes smoothly without lumps.
- Use a hot water bath to gently bake the cheesecake and prevent any cracks on the surface.
- Do not overbeat the eggs into the batter, as this introduces too much air and causes the cake to deflate.
- Leave the baked cheesecake in the turned-off oven with the door cracked for an hour to cool gradually.
- Chill the cheesecake in the refrigerator overnight before attempting to slice it.
FAQs
How should I store this cheesecake? Keep the cheesecake tightly covered in the refrigerator for up to five days. You can also freeze individual slices wrapped securely in plastic for up to two months.
Can I make any substitutions for the sour cream? Full-fat plain Greek yogurt works perfectly as a substitute for the sour cream. It provides a similar tangy flavor and creamy texture to the finished dessert.
What is the best way to serve this to guests? Slice the cheesecake with a sharp knife dipped in hot water and wiped clean between every cut. This ensures perfectly neat portions for your festive brunch table.
What is a common mistake when making this recipe? Skipping the water bath is the most common reason for a dry or cracked surface. The gentle steam is absolutely essential for keeping the filling soft and velvety.
Are these good options for winter desserts? Yes, bright citrus flavors are incredibly comforting and highly seasonal during the colder months. This recipe makes for fabulous winter desserts when you need a little burst of sunshine on a chilly day.

Classic Lemon Cheesecake
Ingredients
Equipment
Method
- Preheat the oven to 325°F (165°C). Wrap the outside of a 9-inch springform pan tightly with several layers of aluminum foil to help prevent water from entering during baking. Lightly grease the inside of the pan if desired.
- In a bowl, combine the graham cracker crumbs, 1/3 cup granulated sugar, and melted butter. Mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom of the springform pan to create an even crust.
- Bake the crust for 10 minutes at 325°F (165°C). Remove it from the oven and let it cool while preparing the filling.
- In a large mixing bowl, beat the softened cream cheese and 1 cup granulated sugar on medium-low speed until smooth and creamy. Scrape down the sides of the bowl as needed to remove lumps.
- Add the sour cream, fresh lemon juice, and grated lemon zest. Mix on low speed until the ingredients are evenly incorporated.
- Add the eggs one at a time, mixing on low speed just until each egg is incorporated. Avoid overmixing, which can introduce excess air and contribute to cracks.
- Pour the cheesecake filling over the cooled crust and smooth the top. Place the foil-wrapped springform pan inside a large roasting pan. Carefully pour hot water into the roasting pan until it reaches about halfway up the sides of the springform pan, taking care not to let water enter the cheesecake.
- Bake at 325°F (165°C) for 60–70 minutes, until the edges are set and the center still has a slight wobble. Turn off the oven, crack the door open, and leave the cheesecake inside for 1 hour to cool gradually.
- Carefully remove the springform pan from the water bath, discard the foil, and let the cheesecake cool completely on a wire rack. Cover and refrigerate for at least 4 hours, preferably overnight, before releasing the sides of the pan and slicing.
- For neat slices, dip a sharp knife in hot water and wipe it clean between cuts. Serve chilled. Add whipped cream, fresh raspberries, or a little lemon curd if desired.
