Description
These flaky puff-pastry bites are filled with creamy brie cheese and a spoonful of tangy cranberry sauce. They bake up golden, buttery, and irresistibly soft inside the kind of appetizer that disappears from the tray within minutes. Perfect for cozy gatherings or simple weeknight treats.
Ingredients
- 1 sheet puff pastry, thawed but still cold
- 5 oz brie cheese, cut into small cubes (rind on is fine)
- ½ cup cranberry sauce (whole-berry or homemade)
- 1 Tbsp honey (optional, for a touch of sweetness)
- 2 Tbsp chopped pecans or walnuts (optional)
- Fresh rosemary leaves, finely chopped (optional garnish)
- 1 Tbsp milk or egg wash for brushing pastry
Instructions
- Prepare pastry: Preheat oven to 375°F (190°C). Lightly grease a mini-muffin tin or line with parchment squares.
- Cut & place: Unfold puff pastry and cut into 2-inch squares. Press each square gently into a muffin cup.
- Fill: Place a cube of brie in each pastry cup, then add about ½ teaspoon cranberry sauce on top. Sprinkle nuts if using.
- Chill: Refrigerate the filled cups for 10 minutes — cold pastry puffs best.
- Bake: Brush edges lightly with milk or egg wash. Bake for 15–18 minutes, until puffed and golden.
- Cool & serve: Let cool for 5 minutes before lifting out. Garnish with fresh rosemary if desired. Serve warm or at room temperature.

Make-ahead: Assemble up to one day in advance; keep chilled until baking.
Freezer tip: Freeze unbaked bites on a tray, store in a bag, and bake from frozen — add 3–4 minutes to baking time.
