Description

A hearty lasagna-inspired soup with beef, Italian sausage, and a creamy ricotta topping. All the flavors of classic lasagna in one comforting bowl.


Ingredients

  • 1 tbsp olive oil

  • 1 tbsp butter

  • ½ lb ground beef

  • ½ lb Italian sausage

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 can crushed tomatoes (28 oz)

  • 4 cups beef broth

  • 8 lasagna noodles, broken into pieces

  • 1 tsp Italian seasoning

  • ½ tsp basil

  • ½ tsp oregano

  • Salt and pepper to taste

  • ½ cup ricotta cheese

  • ½ cup shredded mozzarella

  • ¼ cup grated Parmesan


Instructions

  • Heat oil in a pot. Brown beef and sausage, then set aside.

  • In the same pot, sauté onion and garlic in butter.

  • Stir in tomato paste, crushed tomatoes, and broth.

  • Add meats and seasonings. Simmer 20 minutes.

  • Add noodles and cook until tender.

  • Mix ricotta, mozzarella, and Parmesan for topping.

  • Serve soup hot with a dollop of ricotta mixture.

Notes

Use hot sausage for extra spice.

Add mushrooms or zucchini for a veggie boost.
