Description
A hearty lasagna-inspired soup with beef, Italian sausage, and a creamy ricotta topping. All the flavors of classic lasagna in one comforting bowl.
Ingredients
1 tbsp olive oil
1 tbsp butter
½ lb ground beef
½ lb Italian sausage
1 onion, diced
3 garlic cloves, minced
2 tbsp tomato paste
1 can crushed tomatoes (28 oz)
4 cups beef broth
8 lasagna noodles, broken into pieces
1 tsp Italian seasoning
½ tsp basil
½ tsp oregano
Salt and pepper to taste
½ cup ricotta cheese
½ cup shredded mozzarella
¼ cup grated Parmesan
Instructions
Heat oil in a pot. Brown beef and sausage, then set aside.
In the same pot, sauté onion and garlic in butter.
Stir in tomato paste, crushed tomatoes, and broth.
Add meats and seasonings. Simmer 20 minutes.
Add noodles and cook until tender.
Mix ricotta, mozzarella, and Parmesan for topping.
Serve soup hot with a dollop of ricotta mixture.
Notes
Use hot sausage for extra spice.
Add mushrooms or zucchini for a veggie boost.
Freezes well up to 2 months.
