Description

This Lavender Wildflower Honey Lemonade with Thyme layers fragrant lavender with earthy fresh thyme and the complex sweetness of wildflower honey into a refined, herb-forward lemonade that tastes like a garden in a glass. The wildflower honey adds a floral depth that regular sugar simply cannot match. You need just fifteen minutes to make this elegant and aromatic lemonade.

Ingredients

1/2 cup fresh lemon juice (about 4 lemons)

1 teaspoon lemon zest

3 tablespoons dried culinary lavender

4 fresh thyme sprigs

1/2 cup wildflower honey

1/2 cup hot water (for syrup)

3 cups cold water

1 cup ice cubes

Fresh thyme sprigs and lemon slices for garnish

Instructions

1. Add dried culinary lavender, fresh thyme sprigs, and wildflower honey into a small bowl.

2. Pour hot water over the mixture and stir until the honey dissolves completely.

3. Let the syrup steep for 10 minutes to infuse all the floral and herbal flavors.

4. Strain out the lavender and thyme and let the syrup cool.

5. Squeeze fresh lemons and pour the juice into a large pitcher.

6. Add lemon zest and the strained lavender thyme honey syrup.

7. Pour in cold water and stir until well combined.

8. Taste and adjust sweetness or lemon as needed.

9. Fill glasses with ice, pour the lemonade over the ice, garnish with thyme sprigs and serve immediately.

Notes

Wildflower honey has a richer and more complex floral flavor than regular clover honey โ€” it makes a big difference here.

Do not steep longer than 10 minutes or the thyme turns the drink bitter.

Fresh thyme works best โ€” dried thyme gives a dusty, flat flavor.

Use culinary lavender only to ensure the best and safest flavor in your drink.

Make the syrup base ahead and store in the fridge for up to one week for quick daily batches.
