Description

A smooth and perfectly sweet Brazilian Lemonade with Simple Syrup made from fresh whole limes, cold water, and a light simple syrup base for a crisp, restaurant-style summer drink.

Ingredients

3 medium limes, washed and quartered

4 cups cold water

1/2 cup simple syrup (1:1 sugar to water)

2 cups ice cubes

Instructions

1. Add the quartered limes and cold water to a high-speed blender.

2. Pulse the mixture for exactly 10 to 15 seconds to release the lime juice and essential oils without pulling bitterness from the pith.

3. Strain the liquid through a fine-mesh sieve into a large pitcher or bowl, pressing gently to extract the juice, and discard the leftover lime solids.

4. Return the strained lime water to the rinsed blender.

5. Add the simple syrup and ice cubes.

6. Blend on high until the syrup is fully incorporated and the drink is icy and frothy.

7. Serve immediately in chilled glasses.

Notes

Simple syrup blends smoothly into cold liquids and gives the lemonade a clean, even sweetness.

Do not over-blend the limes in the first step to keep the drink from turning bitter.

Use a 1:1 simple syrup (1 part sugar to 1 part water) for a classic balance.

Serve immediately, as the lime oils can turn bitter if the drink sits in the refrigerator for too long.
