Golden, crispy corn fritters topped with creamy whipped feta a perfect blend of sweet, salty, and tangy flavors that make an irresistible appetizer or side dish.


Ingredients

3 cups fresh corn kernels

1 cup all-purpose flour

1 ½ tsp baking powder

2 large eggs

½ cup milk

2 green onions, chopped

2 tbsp chopped fresh herbs (parsley or cilantro)

½ tsp salt

¼ tsp black pepper

Pinch of paprika or cayenne (optional)

Olive oil for frying

1 cup feta cheese

¼ cup Greek yogurt

1 tbsp olive oil

1 tbsp lemon juice

1 small garlic clove (optional)

Honey, for drizzling (optional)


Instructions

  1. In a food processor, blend feta, yogurt, olive oil, lemon juice, and garlic until smooth. Chill.

  2. In a bowl, whisk flour, baking powder, salt, pepper, and paprika.

  3. In another bowl, beat eggs and milk. Combine wet and dry ingredients.

  4. Fold in corn, green onions, and herbs.

  5. Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter and flatten slightly.

  6. Fry 2–3 minutes per side until golden.

  7. Drain on paper towels.

  8. Serve warm with whipped feta and a drizzle of honey.

Notes

Use fresh or thawed frozen corn.

Add cheese or jalapeño for variation.

Keep warm in a 200°F oven if making in batches.

The whipped feta can be made a day ahead.
