Ingredients

  • 2 cups full-fat or 2% cottage cheese
  • 4 oz cream cheese, softened
  • 2 cups shredded cooked chicken (rotisserie, canned, or leftover)
  • 3/4 cup Frank’s RedHot Original Sauce
  • 1/2 cup blue cheese crumbles
  • 1/4 cup finely diced celery
  • 1/4 cup sliced green onions
  • 1 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Extra blue cheese crumbles and green onions for garnish

Instructions

  1. Blend Cottage Cheese: Add cottage cheese to a blender or food processor. Blend until completely smooth with no lumps. This is critical for texture.
  2. Add Cream Cheese: Add softened cream cheese to the blended cottage cheese. Blend again until completely smooth and combined.
  3. Mix in Chicken: Transfer the blended mixture to a large bowl. Fold in shredded cooked chicken until evenly distributed.
  4. Add Buffalo Sauce: Pour in Frank’s RedHot sauce and stir until everything is coated. The mixture should be orange-red.
  5. Fold in Extras: Gently fold in blue cheese crumbles, finely diced celery, sliced green onions, lemon juice, salt, and pepper. Taste and adjust seasonings.
  6. Warm Method (Optional): Transfer to a baking dish and bake at 350°F for 15-20 minutes until heated through and slightly bubbling around edges.
  7. Cold Method (Recommended): Transfer to a serving bowl and refrigerate for at least 1 hour before serving.
  8. Serve: Top with extra blue cheese crumbles and green onions. Serve with crackers, chips, celery, cauliflower, or carrots.

Notes

Blend Completely: No lumps in the cottage cheese mixture. Lumps will ruin the silky texture.

Softened Cream Cheese: Let sit at room temperature for 20 minutes, or microwave for 15 seconds for smooth blending.

Quality Cottage Cheese: Some brands blend smoother than others. Experiment to find your favorite.

Gentle Folding: After adding chicken and extras, fold gently. Overmixing can break down the texture.
