Ingredients

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 4 cups chicken broth

  • 2 cups crushed tomatoes

  • 2 cups cooked shredded chicken

  • 6 lasagna noodles, broken into pieces

  • 1 cup heavy cream

  • 1 cup mozzarella cheese, shredded

  • ¼ cup Parmesan cheese, grated

  • 2 cups fresh spinach

  • 1 tsp dried basil

  • ½ tsp dried oregano

  • ½ tsp thyme

  • Salt and pepper to taste


Instructions

  • Heat olive oil and butter in a pot. Sauté onion until soft, then add garlic.

  • Add crushed tomatoes, chicken broth, and herbs. Bring to a simmer.

  • Stir in noodles and cook until tender. Add chicken and heat through.
