A creamy, comforting chicken lasagna soup loaded with tender noodles, spinach, and melty cheese. Perfect for cozy weeknights or cold evenings.
Ingredients
2 tbsp olive oil
1 tbsp butter
1 onion, diced
3 garlic cloves, minced
4 cups chicken broth
2 cups crushed tomatoes
2 cups cooked shredded chicken
6 lasagna noodles, broken into pieces
1 cup heavy cream
1 cup mozzarella cheese, shredded
¼ cup Parmesan cheese, grated
2 cups fresh spinach
1 tsp dried basil
½ tsp dried oregano
½ tsp thyme
Salt and pepper to taste
Instructions
Heat olive oil and butter in a pot. Sauté onion until soft, then add garlic.
Add crushed tomatoes, chicken broth, and herbs. Bring to a simmer.
Stir in noodles and cook until tender. Add chicken and heat through.
Stir in cream and cheeses until melted and smooth.
Add spinach and cook until wilted.
Season to taste and serve with extra Parmesan.
Notes
Substitute cashew cream for a dairy-free option.
Add red pepper flakes for a little heat.
