Description

A creamy, tropical Creamy Coconut Lime Slushie made with coconut milk, fresh lime juice, and plenty of ice for a rich, frosty summer drink with a smooth, velvety texture.


Ingredients

1 cup fullโ€‘fat coconut milk (or light coconut milk for a lighter version)

3/4 cup fresh lime juice (about 3โ€“4 limes)

1/3 cup granulated sugar (or sugarโ€‘free sweetener to taste)

4 cups ice cubes


Instructions

1. In a highโ€‘speed blender, combine the coconut milk, fresh lime juice, and sugar (or sugarโ€‘free sweetener).

2. Blend on medium speed until the sugar is fully dissolved and the mixture is smooth and creamy.

3. Add the ice cubes in batches if needed.

4. Blend on high until the mixture reaches a thick, slushie consistency that clings to the sides of the glass.

5. Serve immediately in chilled glasses, optionally garnished with a lime wedge or a sprinkle of toasted coconut flakes.

Notes

For a lighter version, use light coconut milk and reduce the sugar or use a sugarโ€‘free sweetener.

The slushie will soften quickly, so serve right away for the best texture.

If your blender struggles, add an extra splash of coconut milk or water to help it blend smoothly.
