Description

A rich and creamy tomato lasagna soup made with a trio of cheeses ricotta, mozzarella, and Parmesan for the ultimate comforting bowl. Perfect for lazy dinners and cozy nights.


Ingredients

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 can crushed tomatoes (28 oz)

  • 4 cups chicken or vegetable broth

  • 6 lasagna noodles, broken into pieces

  • 1 cup heavy cream

  • ½ cup ricotta cheese

  • 1 cup mozzarella cheese, shredded

  • ¼ cup Parmesan cheese, grated

  • 1 tsp basil

  • ½ tsp oregano

  • ½ tsp thyme

  • Salt and pepper to taste

  • Pinch of red pepper flakes


Instructions

  • Heat oil and butter in a pot. Sauté onion until soft, then add garlic.

  • Stir in tomato paste, crushed tomatoes, and broth. Simmer 10 minutes.

  • Add herbs and broken lasagna noodles. Cook until noodles are tender.

  • Stir in cream and cheeses until melted and smooth.

  • Season, garnish with basil and Parmesan, and serve warm.

Notes

Substitute half-and-half for lighter creaminess.
