Description
A rich and creamy tomato lasagna soup made with a trio of cheeses ricotta, mozzarella, and Parmesan for the ultimate comforting bowl. Perfect for lazy dinners and cozy nights.
Ingredients
1 tbsp olive oil
1 tbsp butter
1 onion, diced
3 garlic cloves, minced
2 tbsp tomato paste
1 can crushed tomatoes (28 oz)
4 cups chicken or vegetable broth
6 lasagna noodles, broken into pieces
1 cup heavy cream
½ cup ricotta cheese
1 cup mozzarella cheese, shredded
¼ cup Parmesan cheese, grated
1 tsp basil
½ tsp oregano
½ tsp thyme
Salt and pepper to taste
Pinch of red pepper flakes
Instructions
Heat oil and butter in a pot. Sauté onion until soft, then add garlic.
Stir in tomato paste, crushed tomatoes, and broth. Simmer 10 minutes.
Add herbs and broken lasagna noodles. Cook until noodles are tender.
Stir in cream and cheeses until melted and smooth.
Season, garnish with basil and Parmesan, and serve warm.
Notes
Substitute half-and-half for lighter creaminess.
Add spinach or kale for a veggie boost.
