Why You’ll Fall in Love with This Soup

I adore this soup because it strikes that perfect balance between rich and refreshing. The sausage gives it a bold flavor, while the spinach adds lightness and color. The creamy broth, made with a touch of parmesan, turns silky as it simmers.

It’s the kind of meal that feels fancy but comes together in under an hour. Whenever I make it, I’m reminded of the same warm, comforting flavors in my healthy lasagna soup with ground turkey and spinach that same blend of protein, greens, and creamy broth that hits every note of comfort.

What You’ll Need to Make It

This creamy Italian sausage soup is full of simple ingredients that come together beautifully.

  • Italian sausage: I prefer using spicy ground sausage for flavor, but mild works well too.
  • Potatoes: They soak up the broth’s richness and add heartiness, similar to a classic sausage potato soup.
  • Spinach: Fresh baby spinach gives a pop of color and a bit of nutrition. Kale also works beautifully.
  • Onion and garlic: The aromatic foundation that makes the kitchen smell irresistible.
  • Chicken broth: Light yet flavorful it’s the perfect base for the creamy sauce.
  • Heavy cream: Adds body and smoothness without overpowering.
  • Parmesan cheese: A little goes a long way for saltiness and that Tuscan flavor twist.
  • Olive oil: For browning and sautéing the aromatics.
  • Seasoning: Crushed red pepper flakes, thyme, salt, and pepper for depth.

Optional add-ins:

  • Chopped sun-dried tomatoes for extra tang.
  • Crumbled bacon for a smoky finish.
  • A dash of lemon juice to brighten up the creamy broth.

How I Bring It All Together

Here’s how I make this creamy Tuscan soup from start to finish it’s simple and so satisfying.

Step 1 – Brown the sausage
I start by heating a little olive oil in a large pot over medium heat. Once hot, I add the Italian sausage, breaking it up with a wooden spoon as it cooks. When it’s browned and slightly crispy, I transfer it to a plate, leaving just a bit of fat in the pot for flavor.

Step 2 – Sauté the aromatics
In the same pot, I add diced onion and cook until it softens and becomes fragrant. Then I add minced garlic and cook for another 30 seconds, just until it releases that warm, savory aroma.

Step 3 – Add the potatoes and broth
Next, I toss in the sliced potatoes, giving them a quick stir to coat them in the onion and garlic mixture. Then I pour in the chicken broth, scraping up all the flavorful bits from the bottom of the pot. Once it reaches a simmer, I let the potatoes cook until tender usually about 12 to 15 minutes.

Step 4 – Add the sausage back in
When the potatoes are soft, I return the browned sausage to the pot. At this point, the soup already smells incredible and has a beautiful golden color.

Step 5 – Make it creamy
I lower the heat and stir in the heavy cream and parmesan cheese. The broth thickens slightly and turns smooth and velvety. I taste and adjust with salt, pepper, and a pinch of red pepper flakes for heat.

Step 6 – Finish with spinach
Finally, I add the fresh spinach and let it wilt gently in the hot soup. It adds a burst of color and a touch of freshness that balances the creamy richness perfectly.

Step 7 – Serve and enjoy
I ladle the soup into bowls and top each one with a sprinkle of parmesan and a drizzle of olive oil. Sometimes, I serve it with a slice of crusty bread to soak up every drop of the creamy broth. It’s the same kind of cozy satisfaction I get from my one-pot vegetarian lasagna soup with zucchini and ricotta.

Fun Twists and Flavor Ideas

The best part of this soup is how easy it is to customize.
