Description

A creamy Tuscan-style soup made with Italian sausage, potatoes, spinach, and parmesan in a rich, velvety broth. Perfect for cozy dinners and winter nights.


Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 3 garlic cloves, minced

  • 4 cups chicken broth

  • 3 medium potatoes, sliced thin

  • 2 cups fresh spinach

  • 1 cup heavy cream

  • ½ cup grated parmesan cheese

  • ½ tsp thyme

  • ¼ tsp crushed red pepper flakes

  • Salt and black pepper to taste


Instructions

  • Heat olive oil in a large pot. Brown sausage and set aside.

  • In the same pot, sauté onion until soft, then add garlic.

  • Add potatoes and broth. Simmer 12–15 minutes until tender.

  • Return sausage to the pot and stir.

  • Lower heat and add cream, parmesan, and seasonings. Stir until smooth.

  • Add spinach and cook until wilted.

  • Serve hot with extra parmesan and crusty bread.

Notes

Use kale instead of spinach for a heartier texture.

For a dairy-free version, substitute cashew cream for heavy cream.

Keeps well in the fridge for 3–4 days.
