Description
A creamy Tuscan-style soup made with Italian sausage, potatoes, spinach, and parmesan in a rich, velvety broth. Perfect for cozy dinners and winter nights.
Ingredients
1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 small onion, diced
3 garlic cloves, minced
4 cups chicken broth
3 medium potatoes, sliced thin
2 cups fresh spinach
1 cup heavy cream
½ cup grated parmesan cheese
½ tsp thyme
¼ tsp crushed red pepper flakes
Salt and black pepper to taste
Instructions
Heat olive oil in a large pot. Brown sausage and set aside.
In the same pot, sauté onion until soft, then add garlic.
Add potatoes and broth. Simmer 12–15 minutes until tender.
Return sausage to the pot and stir.
Lower heat and add cream, parmesan, and seasonings. Stir until smooth.
Add spinach and cook until wilted.
Serve hot with extra parmesan and crusty bread.
Notes
Use kale instead of spinach for a heartier texture.
For a dairy-free version, substitute cashew cream for heavy cream.
Keeps well in the fridge for 3–4 days.
