Description

A rich, creamy, and comforting slow cooker soup loaded with seasoned ground beef, tender potatoes, and sharp cheddar cheese. It tastes just like your favorite burger in a warm, cozy bowl.


Ingredients

  • 1 lb (450g) lean ground beef (90% lean)
  • 1 small yellow onion, chopped
  • 3 cups Yukon Gold potatoes, peeled and cubed
  • 1 cup carrots, shredded or diced
  • 1 stalk celery, diced
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 3 cups chicken broth
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 1.5 cups whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Bacon bits and green onions for topping

Instructions

  1. Brown Beef: In a skillet, cook ground beef and onion until beef is browned and onion is tender. Drain excess fat.
  2. Combine: Transfer the beef mixture to a 6-quart slow cooker. Add potatoes, carrots, celery, basil, parsley, and chicken broth. Stir to combine.
  3. Slow Cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until potatoes are tender.
  4. Thicken: About 30 minutes before serving, melt butter in a saucepan. Whisk in flour and cook for 1 minute. Slowly whisk in milk and cook until thickened. Stir this mixture into the crockpot.
  5. Melt Cheese: Turn off the slow cooker (or set to Warm). Stir in the shredded cheese and sour cream until melted and smooth.
  6. Serve: Season with salt and pepper. Ladle into bowls and top with bacon and green onions.

Notes

Cheese Tip: Always grate your own cheese from a block. Pre-shredded cheese has anti-caking agents that can make the soup grainy.
