Crockpot White Lasagna Soup

There is something undeniably magical about lasagna. The layers of pasta, the creamy cheese, the savory meat it is the ultimate comfort food. But let’s be honest, assembling a traditional lasagna on a busy Tuesday night is not happening. That is where this Crockpot White Lasagna Soup comes in to save the day.

I like to think of this recipe as the cozy, low maintenance cousin of the classic baked dish. It gives you all those rich, velvety flavors you crave but with a fraction of the effort. It is essentially a warm hug in a bowl, perfect for chilly evenings when you need something hearty but don’t want to turn on the oven.

This soup fits perfectly into my rotation of crock pot meals because it is indulgent without being complicated. It is creamy, cheesy, and packed with tender chicken and spinach. If you are looking for crockpot soup recipes that feel a little fancy but are secretly super easy, this is your new go-to. It sits right alongside my crockpot chicken gnocchi soup as a creamy, dreamy favorite.

Why This Creamy Pot Beats the Baking Dish

I love a good red sauce lasagna, but sometimes you just want something different. This white version is lighter, brighter, and incredibly satisfying.

First, it is a texture lover’s dream. You get the soft bite of the broken lasagna noodles, the chew of the chicken, and the silky smoothness of the creamy broth. It is rich without being heavy, similar to the balance in my crockpot lemon chicken soup.

Second, it is incredibly forgiving. Unlike a baked lasagna that can dry out if left too long, the slow cooker keeps everything moist and juicy. The flavors have time to meld together beautifully.

Finally, it is versatile. You can serve it with a big piece of garlic bread for dunking, or keep it lighter with a side salad. It is a meal that adapts to your hunger level.

  • Yield: 6 Servings

Description

A creamy, dreamy twist on classic lasagna made easy in the slow cooker. Packed with tender chicken, spinach, and broken lasagna noodles in a rich cheesy broth, topped with a dollop of ricotta.

Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp rosemary
  • 810 lasagna noodles, broken into pieces
  • 1 cup half-and-half (or heavy cream)
  • 2 cups fresh baby spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Ricotta cheese and fresh parsley for topping

Instructions

Combine Base: Place chicken, onion, garlic, oregano, basil, rosemary, salt, and pepper in a 6-quart slow cooker. Pour in the chicken broth.

Slow Cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is tender.

Shred: Remove chicken, shred with forks, and return to the pot.

Cook Noodles: Stir in the half-and-half and the broken uncooked lasagna noodles. Cover and cook on HIGH for another 30-45 minutes until noodles are tender. (Stir once or twice to prevent sticking).

Finish: Stir in the spinach, mozzarella, and Parmesan cheese. Let sit for 2 minutes until cheese melts and spinach wilts.

Serve: Ladle into bowls and top with a dollop of ricotta cheese and fresh parsley.

Notes

  • Noodle Tip: Break the noodles into varying sizes for a rustic look. Stirring them during the final cook helps prevent them from clumping.
  • Vegetarian: Swap chicken for mushrooms and white beans, and use vegetable broth.
  • Storage: Pasta will absorb liquid in the fridge. Add a splash of broth or milk when reheating leftovers.

The Lasagna Essentials

To create this deconstructed masterpiece, we need a few key ingredients.

The Protein
I use boneless skinless chicken breasts or thighs. They cook right in the broth and shred effortlessly. You could also use rotisserie chicken if you are in a rush, adding it at the end.

The Noodles
Standard lasagna noodles are the way to go. Break them into bite-sized pieces before tossing them in. Regular pasta like bowtie or rotini works too, but the broken lasagna sheets give it that authentic lasagna soup crockpot feel.

The Creamy Base
A mix of chicken broth and half and half (or heavy cream) creates the luxurious liquid. We heighten the flavor with plenty of garlic, onion, and Italian seasoning.

The Cheesy Finish
This is non negotiable. We stir in a blend of mozzarella and Parmesan for that stretchy, nutty goodness. A dollop of ricotta cheese on top right before serving mimics the filling of a real lasagna.

The Greens
Fresh spinach adds a pop of color and nutrition, cutting through the richness of the dairy. It is a trick I use in my crockpot chicken parmesan soup to sneak in veggies effortlessly.

Slow Cooking to Perfection

Cooking this soup is a breeze. It is mostly hands off, which is exactly what we want.

Step 1: The Base Layer
Place your chicken, diced onion, minced garlic, and seasonings into the slow cooker.

Step 2: The Liquid
Pour in the chicken broth. Give it a quick stir.

Step 3: The Simmer
Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours. The chicken should be completely tender.

Step 4: Shred and Cream
Remove the chicken and shred it. Return it to the pot. Stir in the half and half and the broken uncooked lasagna noodles.

Step 5: The Pasta Cook
Cover and turn the heat to HIGH. Cook for another 30 to 45 minutes, stirring occasionally so the noodles don’t stick together. You want them al dente.

Step 6: The Cheesy Finale
Stir in the spinach, mozzarella, and Parmesan cheese. Let it sit for a minute until the cheese melts and the spinach wilts.

Step 7: The Garnish
Serve hot with a generous scoop of ricotta cheese on top and maybe some fresh basil. It is the perfect finishing touch.

Making It Your Own

This recipe is super adaptable.

Vegetarian Twist
Skip the chicken and use vegetable broth. Add mushrooms and zucchini for a hearty veggie version.

Spice It Up
Add a pinch of red pepper flakes for a little heat. It cuts through the creaminess beautifully.

Sausage Swap
For a savory kick, use cooked Italian sausage instead of chicken. It gives the soup a completely different, robust flavor profile.

Thickening Tip
If you prefer a thicker, stew-like consistency, you can whisk a tablespoon of cornstarch with water and add it when you add the cream.

A Bowl of Comfort

There is no need to spend hours layering noodles and sauce. This Crockpot White Lasagna Soup gives you all the flavor with none of the fuss. It is creamy, comforting, and guaranteed to become a family favorite.

Whether you are feeding a crowd or just need a cozy dinner for two, I hope this recipe brings warmth and joy to your kitchen.
