  • Author: danyrecipes
  • Total Time: 10 minutes
  • Yield: 4 servings

Description

This Easy Blueberry Pineapple Coconut Lemonade blends sweet blueberries, tangy pineapple, and creamy coconut water with bright lemon juice into a tropicalโ€‘style lemonade that tastes like a vacation in a glass, with bold berry flavor, a hint of citrus, and a smooth, hydrating finish. The coconut water adds natural sweetness and electrolytes for a refreshing, light drink thatโ€™s still rich and fruity. This lemonade is ready in just ten minutes.

Ingredients

1 cup fresh blueberries

1 cup fresh or frozen pineapple chunks

1/2 cup fresh lemon juice (about 4 lemons)

1 teaspoon lemon zest

3 cups pure coconut water (unsweetened)

1/4 cup honey or simple syrup (adjust to taste)

1 cup ice cubes

Fresh blueberries, pineapple chunks, and a coconut slice for garnish

Instructions

1. Add blueberries and pineapple chunks into a highโ€‘speed blender and blend until completely smooth.

2. Strain the fruit puree through a fine mesh sieve into a large pitcher and discard all solids.

3. Pour in fresh lemon juice and add lemon zest.

4. Add honey or simple syrup and coconut water.

5. Stir everything together until well combined.

6. Taste and adjust sweetness or lemon juice as needed.

7. Fill glasses with ice cubes, pour the lemonade over the ice, garnish with pineapple chunks, blueberries, and a coconut slice and serve immediately.

Notes

Use ripe, fragrant pineapple and deeply colored blueberries for the sweetest flavor and the most vibrant turquoiseโ€‘violet color.

Coconut water adds a light, slightly salty sweetness and makes this lemonade naturally hydrating and lower in sugar.

Frozen pineapple and blueberries work perfectly here and are great when fresh fruit is not in season.

Doubleโ€‘strain the blended fruit puree to remove all fibers and seeds for the smoothest texture.

Store in the fridge for up to 2 days โ€” stir well before serving as natural separation occurs.
