Ingredients

2 cups fresh raspberries (plus more for garnish)

3/4 cup fresh lemon juice (about 6 lemons)

1 teaspoon lemon zest

1/2 cup granulated sugar

1/2 cup water (for simple syrup)

3 cups cold water

1 cup ice cubes

Fresh raspberries and lemon slices for garnish


Instructions

1. Make the simple syrup by combining sugar and 1/2 cup water in a small saucepan over medium heat, stirring until sugar fully dissolves, then remove from heat and let cool completely.

2. Add fresh raspberries into a high-speed blender and blend until completely smooth.

3. Strain the raspberry puree through a fine mesh sieve into a large pitcher, pressing firmly to extract all juice, and discard all seeds and solids.

4. Pour in fresh lemon juice and add lemon zest.

5. Add the cooled simple syrup and 3 cups of cold water.

6. Stir everything together until well combined.

7. Taste and adjust sweetness or lemon juice as needed.

8. Fill glasses with ice cubes, pour the lemonade over the ice, garnish with fresh raspberries and lemon slices and serve immediately.

Making the simple syrup from scratch gives you full control over sweetness โ€” adjust sugar to your preference.

Strain the raspberry puree very thoroughly using a fine mesh sieve to remove all tiny seeds.

Fresh raspberries give the most vibrant color and flavor but frozen raspberries work equally well.

The deep ruby-red color of this lemonade looks absolutely stunning in clear tall glasses with ice.
