2 racks St. Louis-style pork ribs (45 lbs total)

2 tbsp olive oil

2 tbsp brown sugar

1 tbsp smoked paprika

2 tsp garlic powder

2 tsp onion powder

1 tsp chipotle chili powder

1 tsp salt

½ tsp black pepper


Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with foil.
  2. Remove membrane from ribs, pat dry, and rub with olive oil.
