Description
A creamy, golden sweet corn bake layered with melty cheese and baked to perfection. The perfect side dish for holidays, barbecues, or any cozy meal.
Ingredients
4 cups sweet corn (fresh, frozen, or canned)
2 large eggs
1 cup heavy cream
2 tbsp all-purpose flour
2 tbsp melted butter
1 tbsp sugar
1/2 tsp salt
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
Optional: jalapeños, bacon bits, herbs, paprika
Instructions
- Preheat oven to 350°F (175°C). Grease a medium baking dish.
- In a large bowl, whisk eggs, cream, butter, sugar, salt, and flour.
- Fold in corn and half the cheese.
- Pour into dish and top with remaining cheese and optional paprika.
- Bake for 40 to 45 minutes until golden and bubbly.
- Cool slightly before serving.
Notes
Use half-and-half instead of heavy cream for a lighter texture.
Add jalapeños or bacon for extra flavor.
Can be made ahead and reheated in the oven.
