Sweet Corn Bake with Melty Cheese

Description

A creamy, golden sweet corn bake layered with melty cheese and baked to perfection. The perfect side dish for holidays, barbecues, or any cozy meal.


Ingredients

4 cups sweet corn (fresh, frozen, or canned)

2 large eggs

1 cup heavy cream

2 tbsp all-purpose flour

2 tbsp melted butter

1 tbsp sugar

1/2 tsp salt

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

Optional: jalapeños, bacon bits, herbs, paprika


Instructions

  1. Preheat oven to 350°F (175°C). Grease a medium baking dish.
  2. In a large bowl, whisk eggs, cream, butter, sugar, salt, and flour.
  3. Fold in corn and half the cheese.
  4. Pour into dish and top with remaining cheese and optional paprika.
  5. Bake for 40 to 45 minutes until golden and bubbly.
  6. Cool slightly before serving.

Notes

Use half-and-half instead of heavy cream for a lighter texture.

Add jalapeños or bacon for extra flavor.

Can be made ahead and reheated in the oven.
