Ingredients
1 cup all-purpose flour
1 cup granulated sugar
½ cup unsalted butter, melted
2 large eggs
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
¼ teaspoon salt
¾ cup powdered sugar (for glaze)
1½ tablespoons lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper and grease lightly.
- Whisk melted butter and sugar until smooth.
- Add eggs one at a time, mixing after each addition.
- Stir in lemon juice, zest, and vanilla.
- Combine flour and salt, then fold into wet ingredients.
- Pour batter into pan and smooth the top.
- Bake 20–25 minutes, until edges are golden and center is set.
- Let cool for 10 minutes.
- Mix glaze with powdered sugar and lemon juice, then pour over blondies.
- Let glaze set before slicing.
Notes
Use Meyer lemons for a sweeter flavor. Add blueberries, coconut, or poppy seeds for fun variations. Store at room temperature up to 3 days or freeze for 2 months.
