Ingredients

1/2 cup fresh lemon juice (about 4 lemons)

1 teaspoon lemon zest

1/2 medium cucumber (peeled and roughly chopped)

8 fresh basil leaves

10 fresh mint leaves

3 tablespoons dried culinary lavender

1/3 cup honey or simple syrup (adjust to taste)

1/2 cup hot water (for lavender syrup)

3 cups cold water

1 cup ice cubes

Thin cucumber slices, basil leaves and lemon rounds for garnish


Instructions

1. Add dried culinary lavender into a small bowl and pour hot water over it.

2. Add honey or simple syrup and stir until fully dissolved.

3. Steep for 10 minutes then strain out the lavender and let the syrup cool.

4. Add chopped cucumber into a high-speed blender and blend until smooth.

5. Strain the cucumber juice through a fine mesh sieve and set aside.

6. Add fresh basil leaves and fresh mint leaves into a large pitcher.

7. Gently muddle the herbs with a spoon to release their oils.

8. Pour in fresh lemon juice, lemon zest, cucumber juice, and the cooled lavender syrup.

9. Add cold water and stir everything together until well combined.

10. Taste and adjust sweetness or lemon as needed.

11. Fill glasses with ice, pour over the ice, garnish and serve immediately.

Notes

Muddle the basil and mint very gently โ€” over-muddling makes the drink dark and bitter.

Peel the cucumber before blending for the cleanest and most delicate flavor.

Strain the cucumber juice well to avoid a pulpy texture in the final drink.

This lemonade has a beautiful pale green color that looks stunning in tall clear glasses.

Store the lavender syrup base in the fridge for up to one week and mix fresh batches daily.
