This Homemade Roasted Strawberry Vanilla Drink takes fresh strawberries and roasts them until they turn jammy, deep, and intensely sweet before blending them with warm vanilla into a rich, velvety drink unlike anything store-bought. Roasting concentrates every drop of flavor and creates a caramelized depth that raw strawberries simply cannot deliver. You need just thirty minutes and a blender to make this truly special drink.


Ingredients

2 cups fresh strawberries (hulled and halved)

1 tablespoon honey or brown sugar

1 teaspoon pure vanilla extract

1 cup cold milk or oat milk

2 tablespoons honey or simple syrup (adjust to taste)

1 cup ice cubes

1/4 cup cold water (add more as needed)


Instructions

1. Preheat your oven to 400ยฐF (200ยฐC).

2. Place hulled and halved strawberries on a lined baking sheet.

3. Drizzle one tablespoon of honey or brown sugar over the strawberries.

4. Roast in the oven for 20 minutes until jammy and caramelized.

5. Remove from the oven and let the roasted strawberries cool for 10 minutes.

6. Add the cooled roasted strawberries into a high-speed blender.

7. Pour in the milk and add vanilla extract and honey or simple syrup.

8. Add ice cubes and cold water.

9. Blend on high for 30 to 45 seconds until completely smooth.

10. Taste and adjust sweetness or vanilla as needed.

11. Pour into chilled glasses and serve immediately.

Notes

Do not skip the roasting step โ€” it transforms ordinary strawberries into something deeply flavorful.

Let the roasted strawberries cool completely before blending or the drink will turn warm and watery.

Oat milk gives a creamier and richer texture than regular water as the liquid base.

Use pure vanilla extract only โ€” imitation vanilla gives a harsh artificial taste.
