Description

A light and flavorful one-pan dinner made with lean ground turkey, fresh vegetables, and herbs. Quick, healthy, and perfect for busy weeknights.


Ingredients

  • 1 tbsp olive oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 1 lb ground turkey

  • 1 bell pepper, chopped

  • 1 zucchini, sliced

  • 1 cup broccoli florets

  • 1 cup spinach or kale

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt and pepper to taste

  • Juice of ½ lemon


Instructions

  • Heat olive oil in a skillet. Sauté onion until soft, then add garlic.

  • Add turkey and cook until browned.

  • Stir in peppers, zucchini, and broccoli; cook until tender.

  • Season with herbs, paprika, salt, and pepper.

  • Stir in greens and let them wilt.

  • Finish with a squeeze of lemon before serving.

Notes

Add quinoa or brown rice for a more filling meal.

Substitute chickpeas for a vegetarian version.
