Description
A light and flavorful one-pan dinner made with lean ground turkey, fresh vegetables, and herbs. Quick, healthy, and perfect for busy weeknights.
Ingredients
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 lb ground turkey
1 bell pepper, chopped
1 zucchini, sliced
1 cup broccoli florets
1 cup spinach or kale
1 tsp Italian seasoning
½ tsp paprika
Salt and pepper to taste
Juice of ½ lemon
Instructions
Heat olive oil in a skillet. Sauté onion until soft, then add garlic.
Add turkey and cook until browned.
Stir in peppers, zucchini, and broccoli; cook until tender.
Season with herbs, paprika, salt, and pepper.
Stir in greens and let them wilt.
Finish with a squeeze of lemon before serving.
Notes
Add quinoa or brown rice for a more filling meal.
Substitute chickpeas for a vegetarian version.
Keeps well in the fridge for up to 3 days.
