Description
A crisp Lime Mint Cooler Slushie made with fresh lime juice, torn mint leaves, a touch of sweetness, and plenty of ice for a superโrefreshing, herbaceous frozen drink that tastes like a slushy mojitoโmocktail in a glass.
Ingredients
Juice of 3โ4 limes (about 1/3 cup fresh lime juice)
1/4 cup packed fresh mint leaves, plus extra for garnish
2โ3 tablespoons simple syrup or honey (adjust to taste)
1 1/2 cups cold water or sparkling water
4 cups ice cubes
Instructions
1. In a highโspeed blender, combine the lime juice, mint leaves, simple syrup or honey, and cold water (or sparkling water).
2. Blend on medium speed until the mint is finely chopped and the mixture is smooth and fragrant.
3. Add the ice cubes and blend on high until the drink reaches a thick, slushie texture that clings to the sides of the glass.
4. Taste and adjust sweetness by adding a little more syrup or honey, or a splash more lime juice if you want it tarter.
5. Pour immediately into chilled glasses, garnished with a fresh mint sprig and a lime wheel for a cool, barberโshopโstyle look.
Notes
For an adult version, add a splash of white rum or vodka before the final blend to turn it into a slushy mojitoโstyle cocktail.
For extraโfrosty texture, chill the lime juice and water ahead of time or use frozen ice cubes made from limeโinfused water.
If the slushie is too thick, add a splash more water; if too thin, add more ice and blend briefly.
