That memory inspired these Meyer Lemon Meltaways, my favorite among all meyer lemon recipes. They’re buttery, delicate, and so light they truly melt in your mouth. Each bite is filled with that perfect balance of tart and sweet that makes lemon desserts so irresistible.

  • 1 tbsp finely chopped candied ginger for warmth
  • A few drops of lemon extract for a stronger citrus note

How I Make Them

Step 1: Prep and Preheat
I preheat my oven to 350°F (175°C) and line a baking sheet with parchment paper. Then I zest the lemons, and the bright scent instantly fills the kitchen my favorite part of any lemon recipe.

Step 2: Cream the Butter and Sugar
In a large bowl, I cream the butter and powdered sugar until fluffy and pale. Then I add the zest, lemon juice, and vanilla, mixing until smooth.

Step 4: Chill the Dough
For perfect meltaway texture, I chill the dough for 30 minutes. This helps the cookies keep their shape in the oven.

Step 5: Shape and Bake
I scoop small spoonfuls of dough about a tablespoon each and roll them into balls. They go on the prepared baking sheet, spaced about an inch apart. Then I bake for 11–13 minutes, until the bottoms are lightly golden but the tops stay pale.

Step 6: The Powdered Sugar Magic
Once baked, I let them cool for just a few minutes. While still slightly warm, I roll each cookie in powdered sugar until coated, then let them cool completely before giving them a second dusting. That’s what gives them their signature cloud-like look.
