Description

Delicate, buttery cookies infused with fragrant Meyer lemon and coated in powdered sugar. These Meyer Lemon Meltaways are tender, sweet, and full of citrus sunshine perfect for tea or dessert trays.


Ingredients

1 cup unsalted butter, softened

½ cup powdered sugar

2 tbsp Meyer lemon zest

2 tbsp fresh Meyer lemon juice

1 tsp vanilla extract

2 cups all-purpose flour

¼ cup cornstarch

¼ tsp salt

1 cup powdered sugar (for rolling)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream butter and powdered sugar until light and fluffy.
  3. Add lemon zest, juice, and vanilla; mix well.
  4. In another bowl, whisk flour, cornstarch, and salt. Combine with the wet mixture until a soft dough forms.
  5. Chill the dough for 30 minutes.
  6. Roll into 1-inch balls and place on baking sheet.
  7. Bake 11–13 minutes until edges are lightly golden.
  8. Cool slightly, then roll in powdered sugar while warm. Cool completely and roll again.

Notes

Use fresh Meyer lemons for their signature floral sweetness.

Dough can be made ahead and chilled overnight.

For sandwich cookies, add a layer of lemon curd between two meltaways.
