Description
A flavorful slow cooker chicken tortilla soup made with tender chicken, beans, corn, and spices simmered to perfection. Finished with lime, avocado, and crispy tortilla strips for the ultimate comfort meal.
Ingredients
1 ½ lb boneless, skinless chicken breasts or thighs
1 onion, chopped
3 garlic cloves, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup corn kernels
1 can black beans, rinsed and drained
1 can diced tomatoes (14 oz)
4 cups chicken broth
1 tsp chili powder
1 tsp cumin
½ tsp smoked paprika
1 tsp salt
½ tsp black pepper
Juice of 1 lime
¼ cup cream or 2 tbsp Greek yogurt (optional)
Instructions
Add chicken, vegetables, beans, tomatoes, and spices to a slow cooker.
Pour in the chicken broth and stir to combine.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Remove chicken, shred it, and return to the pot.
Stir in lime juice and cream if using.
Serve hot with tortilla strips, avocado, cheese, and cilantro.
