Description
A hearty and creamy slow cooker cowboy casserole layered with ground beef, potatoes, beans, and cheese. Comforting, easy to make, and perfect for busy weeknights.
Ingredients
1 ½ lbs ground beef
1 onion, chopped
3 cloves garlic, minced
4 cups potatoes, thinly sliced
1 (15 oz) can kidney beans, drained and rinsed
1 (10.5 oz) can cream of mushroom soup
1 (14 oz) can diced tomatoes
1 ½ cups shredded cheddar cheese
1 tsp salt
½ tsp pepper
½ tsp paprika
½ tsp chili powder
Optional: corn, bell peppers, jalapeños, bacon bits
Instructions
- Brown the ground beef with onion and garlic; drain excess fat.
- In a slow cooker, layer potatoes, beef mixture, beans, tomatoes, and soup. Repeat layers.
- Top with cheese.
- Cook on low for 6–7 hours or high for 3–4 hours.
- Serve hot with parsley or green onions.
Notes
Swap ground beef for turkey or sausage if desired.
Add extra veggies for color and flavor.
Sprinkle more cheese before serving for extra gooeyness.
Great for freezing and reheats beautifully.
