Description
A cozy, one-pot lasagna soup made with spicy Italian sausage, roasted red peppers, and creamy ricotta. It’s hearty, flavorful, and perfect for cold nights when you want an easy, comforting dinner.
Ingredients
1 lb Italian sausage (spicy or mixed with sweet)
1 tbsp olive oil
1 small onion, chopped
3 cloves garlic, minced
2 tbsp tomato paste
1 (28 oz) can crushed tomatoes
4 cups chicken broth
2 roasted red peppers, chopped
8 lasagna noodles, broken into pieces
1 tsp dried basil
1 tsp dried oregano
1/2 tsp dried thyme
Salt and pepper to taste
1/2 cup ricotta cheese
1/4 cup heavy cream (optional)
Fresh basil, Parmesan, and mozzarella for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned.
- Stir in onion and garlic; cook until soft. Add tomato paste and cook until darkened.
- Pour in crushed tomatoes, broth, and roasted peppers. Season with herbs, salt, and pepper.
- Bring to a simmer, then add noodles. Cook until tender, stirring occasionally.
- Reduce heat; stir in ricotta and cream. Adjust seasoning.
- Serve with fresh basil, mozzarella, and Parmesan on top.
Notes
Add spinach, kale, or mushrooms for extra veggies.
Substitute half-and-half for cream for a lighter version.
Leftovers thicken overnight add broth when reheating.
Freeze without dairy for up to 3 months.
