Description

A spicy, creamy lasagna soup made with Italian sausage, roasted red peppers, and a touch of cream. Comforting, flavorful, and perfect for one-pot dinners.


Ingredients

  • 1 tbsp olive oil

  • 1 lb sweet Italian sausage

  • 1 onion, diced

  • 2 red bell peppers, diced

  • 3 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 can crushed tomatoes (28 oz)

  • 4 cups chicken broth

  • 6 lasagna noodles, broken into pieces

  • ½ cup heavy cream

  • 1 tsp Italian seasoning

  • ½ tsp crushed red pepper flakes (adjust to taste)

  • Salt and pepper to taste

  • ¼ cup grated Parmesan

  • Fresh basil for garnish


Instructions

  • Heat oil in a pot. Brown sausage, then add onion and peppers; sauté until soft.

  • Stir in garlic and tomato paste; cook briefly.

  • Add crushed tomatoes, broth, and seasonings. Simmer 15 minutes.

  • Add noodles and cook until tender.

  • Stir in cream and adjust seasoning.

  • Serve with Parmesan and basil.

Notes

For a milder flavor, use mild sausage and reduce red pepper flakes.

Add spinach or zucchini for extra veggies.
