Description
A spicy, creamy lasagna soup made with Italian sausage, roasted red peppers, and a touch of cream. Comforting, flavorful, and perfect for one-pot dinners.
Ingredients
1 tbsp olive oil
1 lb sweet Italian sausage
1 onion, diced
2 red bell peppers, diced
3 garlic cloves, minced
2 tbsp tomato paste
1 can crushed tomatoes (28 oz)
4 cups chicken broth
6 lasagna noodles, broken into pieces
½ cup heavy cream
1 tsp Italian seasoning
½ tsp crushed red pepper flakes (adjust to taste)
Salt and pepper to taste
¼ cup grated Parmesan
Fresh basil for garnish
Instructions
Heat oil in a pot. Brown sausage, then add onion and peppers; sauté until soft.
Stir in garlic and tomato paste; cook briefly.
Add crushed tomatoes, broth, and seasonings. Simmer 15 minutes.
Add noodles and cook until tender.
Stir in cream and adjust seasoning.
Serve with Parmesan and basil.
Notes
For a milder flavor, use mild sausage and reduce red pepper flakes.
Add spinach or zucchini for extra veggies.
Freezes well for up to 2 months.
