Description
A bold, creamy, and comforting spicy ramen noodle soup made with garlic, ginger, chili paste, and silky coconut broth. Perfect for quick weeknight dinners.
Ingredients
2 tsp sesame oil
3 cloves garlic, minced
1 tsp grated ginger
1–2 tbsp chili paste or Sriracha
3 tbsp soy sauce
1 tsp brown sugar or honey
4 cups chicken or vegetable broth
1 cup coconut milk or ½ cup heavy cream
2 packs ramen noodles
Optional: soft-boiled egg, mushrooms, spinach, tofu, green onions, lime wedges, sesame seeds
Instructions
- Heat sesame oil in a pot and sauté garlic and ginger until fragrant.
- Stir in chili paste, soy sauce, and sugar.
- Pour in broth and bring to a simmer.
- Add coconut milk and stir until creamy.
- Add ramen noodles; cook until tender (3–4 minutes).
- Serve hot with toppings of your choice.
Notes
For richer flavor, add miso paste or a splash of fish sauce.
Adjust spice to your taste.
Store leftovers up to 2 days and reheat gently.
