Description

Ingredients

Ground beef, onion, garlic, taco seasoning, diced tomatoes with green chilies, black beans, cheddar cheese, tortilla chips, sour cream, salsa, lettuce, avocado.


Instructions

Brown beef with onion and garlic. Add taco seasoning, water, and tomatoes; simmer. Layer chips, beef mixture, beans, and cheese in a baking dish. Bake at 375°F for 20 minutes until bubbly. Top with fresh garnishes before serving.

Notes

• 1 (10 oz) can diced tomatoes with green chilies
• 1 (15 oz) can black beans, drained and rinsed
• 2 cups shredded cheddar or Mexican blend cheese
• 2 cups crushed tortilla chips or corn chips

Toppings and Add-Ons

How I Bring It All Together

I start by preheating the oven to 375°F and greasing a 9×13-inch baking dish. In a large skillet, I cook the ground beef with onion and garlic until browned and crumbly. Once the beef is cooked through, I stir in taco seasoning, water, and the can of tomatoes with green chilies. I let it simmer for five minutes until thickened and flavorful.

Next, I layer the crushed tortilla chips on the bottom of the baking dish, spreading the seasoned beef mixture evenly on top. Then I sprinkle the black beans across and finish it off with a generous layer of shredded cheese.

I bake it uncovered for 15 to 20 minutes until the cheese is melted and bubbly. When it comes out of the oven, I top it with fresh lettuce, salsa, sour cream, and whatever toppings we’re craving that night. It smells like taco night, but with the heartiness of a casseroleit’s comfort food at its best.
