Description
Antipasto pasta salad with Italian dressing is a hearty cold pasta salad inspired by an Italian antipasto platter, filled with cured meats, cheese, olives, and marinated vegetables.
Ingredients
12 oz rotini pasta
1/2 cup salami, chopped
1/2 cup pepperoni, sliced
1 cup mozzarella pearls
1/2 cup black olives, sliced
1/2 cup pepperoncini, sliced
1/2 cup marinated artichoke hearts, chopped
1 cup cherry tomatoes, halved
3/4 cup Italian dressing
2 tbsp parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Cook the pasta in salted boiling water until al dente.
2. Drain and rinse the pasta under cold water until fully cooled.
3. In a large bowl, combine the pasta, salami, pepperoni, mozzarella, olives, pepperoncini, artichoke hearts, and tomatoes.
4. Pour the Italian dressing over the salad and toss until well coated.
5. Season with salt and black pepper as needed.
6. Sprinkle with parsley and refrigerate for at least 30 minutes before serving.
Notes
This salad is perfect for parties and potlucks.
Use marinated mozzarella balls for extra flavor.
It tastes even better after chilling.
