Description
Asian cold pasta salad with ginger dressing combines tender noodles with edamame, crisp vegetables, sesame seeds, and a bold sesame-soy-ginger vinaigrette.
Ingredients
12 oz soba noodles or spaghetti
1 cup shelled edamame, cooked
1 red bell pepper, thinly sliced
1 carrot, julienned or shredded
3 green onions, sliced
1/4 cup cilantro, chopped
2 tbsp sesame seeds, toasted
1/3 cup rice vinegar
1/4 cup soy sauce (low sodium)
3 tbsp sesame oil
2 tbsp vegetable oil
2 tbsp fresh ginger, grated
1 tbsp honey
2 garlic cloves, minced
1 tsp sriracha (optional)
Instructions
1. Bring large pot of salted water to boil and cook soba noodles or spaghetti al dente.
2. Drain noodles and rinse thoroughly under cold water until completely cooled.
3. Whisk together rice vinegar, soy sauce, sesame oil, vegetable oil, ginger, honey, garlic, and sriracha.
4. Add cooled noodles, edamame, bell pepper, carrot, green onions, cilantro, and sesame seeds to large bowl.
5. Pour dressing over salad and toss well to combine.
6. Chill 20-30 minutes before serving.
Notes
Soba noodles give authentic Asian flavor, but spaghetti works great.
Toast sesame seeds in dry pan for extra flavor.
Store covered in refrigerator up to 2 days.
