Description
A crowd-pleasing BBQ chicken pasta salad featuring smoky grilled chicken, sweet corn, black beans, and a creamy BBQ-infused ranch dressing.
Ingredients
12 oz bowtie (farfalle) pasta
2 cups grilled chicken breast, diced
1 cup corn kernels (canned or frozen)
1 cup black beans, rinsed and drained
1/2 cup red bell pepper, diced
1/2 cup BBQ sauce
1/3 cup ranch dressing
1 tbsp lime juice
1/2 tsp chili powder
Salt and pepper to taste
Instructions
1. Cook the pasta in salted water until al dente, drain, and cool under cold water.
2. In a bowl, mix together the BBQ sauce, ranch dressing, lime juice, and chili powder.
3. In a large mixing bowl, combine the cooled pasta, grilled chicken, corn, black beans, and red bell pepper.
4. Add the creamy BBQ dressing and toss until everything is coated well.
5. Taste and add salt or pepper if needed.
6. Serve immediately or keep covered in the fridge for up to 2 hours to let flavors blend.
Notes
Add chopped cilantro or green onions for extra flavor.
Adjust the ratio of BBQ sauce to ranch based on your sweetness preference.
Add a little fresh jalapeรฑo if you like it spicy.
