Description
BLT pasta salad brings together tender pasta, crispy bacon, fresh lettuce, juicy tomatoes, and a creamy dressing for an easy crowd-pleasing side dish.
Ingredients
12 oz rotini, bow tie, or shell pasta
8 slices bacon, cooked and crumbled
2 cups romaine lettuce, chopped
1 1/2 cups cherry or Roma tomatoes, chopped
1/4 cup red onion, finely diced
1/2 cup mayonnaise
1/2 cup ranch dressing
1 tbsp lemon juice
1/4 tsp black pepper
Salt, to taste
Instructions
1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
2. Drain the pasta and rinse it under cold water until fully cooled.
3. Whisk together the mayonnaise, ranch dressing, lemon juice, black pepper, and a pinch of salt in a large bowl.
4. Add the cooled pasta, tomatoes, and red onion to the bowl and toss to coat.
5. Fold in the chopped lettuce and most of the crumbled bacon just before serving.
6. Top with the remaining bacon and serve immediately or chill briefly before serving.
Notes
Add the lettuce right before serving so it stays crisp.
Store leftovers in the refrigerator for up to 2 days.
Use extra ranch dressing if you want a creamier texture.
