Description
Budget-friendly rotini pasta salad combines affordable rotini with colorful bell peppers, onion, cheddar cheese cubes, and Italian dressing for a tasty make-ahead side dish.
Ingredients
12 oz rotini pasta
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1/2 red onion, diced
1 cup cheddar cheese, cubed
1 cup Italian dressing (store-bought)
2 tbsp fresh parsley, chopped (optional)
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil and cook the rotini until al dente.
2. Drain the pasta and rinse it under cold water until fully cooled.
3. Add the cooled pasta, green bell pepper, red bell pepper, yellow bell pepper, red onion, and cheddar cheese to a large bowl.
4. Pour the Italian dressing over the salad and toss until everything is evenly coated.
5. Add parsley if using, then toss again.
6. Cover and chill for at least 30 minutes before serving.
Notes
Use whatever color bell peppers are on sale.
Store-bought Italian dressing works great for this recipe.
Keeps well in the refrigerator for up to 3 days.
