Description
Buffalo chicken cold pasta salad combines tender rotini with spicy buffalo chicken, crisp celery, carrot, and blue cheese in a creamy ranch-based dressing.
Ingredients
12 oz rotini pasta
2 cups cooked chicken breast, diced or shredded
1/2 cup buffalo sauce
1 cup mayonnaise
1/2 cup ranch dressing
1 cup celery, diced
1 carrot, grated
1/2 cup red onion, diced
1/2 cup blue cheese crumbles
1/4 cup fresh parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Bring large pot of salted water to boil and cook rotini al dente.
2. Drain pasta and rinse thoroughly under cold water until completely cooled.
3. Add chicken to bowl with buffalo sauce and toss to coat.
4. Whisk together mayonnaise and ranch dressing until smooth.
5. Add cooled pasta, buffalo chicken, celery, carrot, red onion, blue cheese, and parsley to large bowl.
6. Pour dressing over salad and toss until evenly coated.
7. Chill 30+ minutes before serving.
Notes
Use grilled or shredded rotisserie chicken for convenience.
Adjust buffalo sauce amount for desired heat level.
Store covered in refrigerator up to 2 days.
