Description

Buffalo chicken pasta salad is a bold and creamy cold pasta salad made with tender chicken, crunchy vegetables, ranch dressing, and spicy buffalo sauce for a flavorful kick.


Ingredients

12 oz rotini pasta

2 cups cooked chicken breast, shredded or diced

1/2 cup celery, chopped

1/2 cup red bell pepper, diced

1/4 cup red onion, finely diced

1/2 cup buffalo sauce

1/2 cup ranch dressing

2 tbsp mayonnaise

1/4 tsp garlic powder

1/4 tsp black pepper

1/2 cup shredded mozzarella or crumbled blue cheese

2 tbsp green onions, sliced


Instructions

1. Bring a large pot of salted water to a boil and cook pasta until al dente.

2. Drain the pasta and rinse under cold water until completely cooled.

3. In a medium bowl, whisk together buffalo sauce, ranch dressing, mayonnaise, garlic powder, and black pepper.

4. In a large bowl, combine cooled pasta, chicken, celery, red bell pepper, and red onion.

5. Pour the dressing over the salad and toss until evenly coated.

6. Fold in the mozzarella or blue cheese and top with sliced green onions.

7. Chill for at least 20 to 30 minutes before serving.

Notes

Use blue cheese for a more classic buffalo flavor.

Add extra buffalo sauce if you want more heat.

This salad is best served cold.
