Description
Chicken bacon ranch pasta salad is a hearty cold pasta salad loaded with juicy chicken, crispy bacon, tender pasta, fresh vegetables, and creamy ranch dressing.
Ingredients
12 oz rotini or penne pasta
2 cups cooked chicken breast, diced
6 slices bacon, cooked and crumbled
1 cup cherry tomatoes, halved
1 cup cucumber, chopped
1/4 cup red onion, finely sliced
1 cup cheddar cheese, cubed or shredded
1 cup ranch dressing
1/2 tsp garlic powder
1/2 tsp onion powder
Salt, to taste
Black pepper, to taste
1 tbsp parsley, chopped
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente.
2. Drain the pasta and rinse under cold water until fully cooled.
3. In a large mixing bowl, combine cooled pasta, chicken, bacon, cherry tomatoes, cucumber, red onion, and cheddar cheese.
4. Add ranch dressing, garlic powder, onion powder, salt, and black pepper.
5. Toss until the pasta salad is evenly coated.
6. Sprinkle parsley over the top and mix gently.
7. Cover and chill for at least 30 minutes before serving.
Notes
Reserve a little bacon for topping before serving.
Add more ranch dressing if the salad thickens after chilling.
Store leftovers covered in the refrigerator for up to 3 days.
