Description
Chicken bacon ranch pasta salad combines tender pasta with grilled or rotisserie chicken, crispy bacon, crisp vegetables, and creamy ranch dressing for a hearty cold side dish.
Ingredients
12 oz rotini or farfalle pasta
2 cups cooked chicken breast, diced or shredded
8 slices bacon, cooked and crumbled
1 cup broccoli florets, chopped small
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, diced
3/4 cup ranch dressing
2 tbsp mayonnaise
1 tbsp fresh dill or parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente.
2. Drain pasta and rinse under cold water until fully cooled.
3. Cook bacon until crispy and crumble it.
4. Add cooled pasta, chicken, broccoli, cucumber, cherry tomatoes, red onion, and most of the bacon to large bowl.
5. Whisk together ranch dressing, mayonnaise, salt, and pepper and pour over salad.
6. Toss gently to combine, then add remaining bacon and fresh herbs.
7. Cover and chill 30+ minutes before serving.
Notes
Use grilled or rotisserie chicken for convenience.
Add more ranch before serving if needed.
Store covered in refrigerator up to 3 days.
