Description
Classic cold Italian pasta salad combines tri-color rotini with pepperoni, mozzarella, olives, tomatoes, and crisp vegetables in zesty Italian dressing.
Ingredients
12 oz tri-color rotini pasta
4 oz pepperoni, sliced or diced
8 oz mozzarella cheese, cubed
1/2 cup black olives, sliced
1 cup cherry tomatoes, halved
1 green bell pepper, diced
1 red bell pepper, diced
1/4 cup red onion, diced
3/4 cup Italian salad dressing
2 tbsp fresh parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Bring large pot of salted water to boil and cook tri-color rotini al dente.
2. Drain pasta and rinse thoroughly under cold water until completely cooled.
3. Add cooled pasta, pepperoni, mozzarella, olives, tomatoes, bell peppers, and red onion to large bowl.
4. Pour Italian dressing over salad and toss until evenly coated.
5. Add parsley, salt, and pepper, then toss again.
6. Cover and chill 30 minutes minimum before serving.
Notes
Use good quality Italian dressing for best flavor.
Tri-color pasta adds great visual appeal.
Store covered in refrigerator up to 3 days.
