Description

Classic creamy chicken pasta salad combines tender pasta, cooked chicken, crunchy vegetables, and a rich creamy dressing for a cold and satisfying lunch, dinner, or side dish.


Ingredients

12 oz rotini or elbow pasta

2 cups cooked chicken breast, diced or shredded

1 cup celery, diced

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely diced

1/2 cup mayonnaise

1/4 cup sour cream

2 tbsp lemon juice

1 tbsp Dijon mustard

1 tsp sugar

Salt, to taste

Black pepper, to taste

1 tbsp fresh parsley, chopped


Instructions

1. Bring a large pot of salted water to a boil and cook pasta until al dente.

2. Drain the pasta and rinse under cold water until completely cooled.

3. In a small bowl, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, sugar, salt, and black pepper.

4. In a large mixing bowl, combine cooled pasta, chicken, celery, cucumber, cherry tomatoes, and red onion.

5. Pour the dressing over the salad and toss until everything is evenly coated.

6. Stir in chopped parsley and adjust seasoning if needed.

7. Cover and chill for at least 30 minutes before serving.

Notes

Rotisserie chicken works well in this recipe.

Add a splash of milk if the dressing becomes too thick.

Store covered in the refrigerator for up to 3 days.
