Description
Classic Italian pasta salad with Italian dressing is a fresh and flavorful cold pasta salad loaded with crisp vegetables, olives, cheese, and a zesty Italian-style dressing.
Ingredients
12 oz tri-color rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup red bell pepper, diced
1/4 cup red onion, thinly sliced
1/2 cup black olives, sliced
1 cup mozzarella pearls
3/4 cup Italian dressing
2 tbsp fresh parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente.
2. Drain the pasta and rinse under cold water until completely cooled.
3. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and mozzarella.
4. Pour the Italian dressing over the salad and toss until evenly coated.
5. Season with salt and black pepper to taste.
6. Sprinkle with fresh parsley and chill for at least 30 minutes before serving.
Notes
Tri-color rotini gives the salad a classic look.
Add more dressing before serving if the pasta absorbs too much while chilling.
Store covered in the refrigerator for up to 3 days.
