Description
Creamy lemon chicken pasta salad is a light yet creamy pasta salad featuring tender chicken, short pasta, crisp vegetables, and a tangy lemonโbased dressing.
Ingredients
12 oz rotini pasta
2 cups cooked chicken breast, diced or shredded
1 cup broccoli florets, chopped small
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/3 cup mayonnaise
1/4 cup plain Greek yogurt
2 tbsp lemon juice
1 tbsp lemon zest
1 tsp Dijon mustard
Salt, to taste
Black pepper, to taste
Instructions
1. Cook pasta until al dente, drain, and cool under cold water.
2. In a small bowl, whisk mayonnaise, Greek yogurt, lemon juice, lemon zest, mustard, salt, and pepper.
3. In a large bowl, combine cooled pasta, chicken, broccoli, tomatoes, and cucumber.
4. Pour the lemonโyogurt dressing over the mixture and toss until evenly coated.
5. Refrigerate for at least 30 minutes before serving.
Notes
Rotisserie chicken works well for convenience.
Add extra lemon juice for a sharper tang.
Stir again before serving as the dressing thickens.
