Description
Easy rotini pasta salad with Italian dressing is a simple cold pasta salad made with tender rotini, fresh vegetables, olives, and bottled or homemade Italian dressing.
Ingredients
12 oz rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, finely sliced
1/2 cup black olives, sliced
3/4 cup Italian dressing
2 tbsp parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Cook the rotini in salted boiling water until al dente.
2. Drain the pasta and rinse under cold water until cool.
3. In a large bowl, combine the rotini, tomatoes, cucumber, bell pepper, red onion, and olives.
4. Add the Italian dressing and toss well to coat.
5. Season with salt and pepper to taste.
6. Top with parsley and refrigerate until ready to serve.
Notes
This is a great base recipe to customize with cheese or deli meats.
Rotini holds dressing well because of its twists.
Serve chilled for best flavor.
