Description

Green goddess hummus is a herbed, creamy hummus blending chickpeas with fresh parsley, basil, lemon juice, garlic, and a touch of avocado for extra richness.


Ingredients

1 can chickpeas, drained and rinsed

1/2 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/2 avocado, diced

1/4 cup olive oil

3 tbsp lemon juice

2 cloves garlic

Salt, to taste

Black pepper, to taste

Water, if needed, to adjust consistency


Instructions

1. In a food processor, combine chickpeas, parsley, basil, avocado, olive oil, lemon juice, and garlic.

2. Process until smooth, scraping down the sides as needed.

3. Add a splash of water if the hummus is too thick.

4. Season with salt and black pepper.

5. Serve chilled with pita chips, fresh vegetables, or as a spread on sandwiches.

Notes

Adjust lemon and garlic to taste.

This version is extra fresh and herbโ€‘forward.

Best served within 2 days when kept refrigerated.
