Description
Healthy creamy pasta salad with lemony dressing is a light and refreshing pasta salad made with crunchy vegetables and a creamy yogurt-based lemon dressing.
Ingredients
12 oz rotini pasta
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1 cup broccoli florets, chopped small
1/2 cup shredded carrots
3/4 cup plain Greek yogurt
2 tbsp mayonnaise
2 tbsp lemon juice
1 tsp Dijon mustard
1/2 tsp garlic powder
1 tbsp fresh dill or parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente.
2. Drain the pasta and rinse under cold water until fully cooled.
3. In a medium bowl, whisk together Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic powder, dill, salt, and black pepper.
4. In a large bowl, combine the cooled pasta, cucumber, cherry tomatoes, broccoli, and carrots.
5. Pour the dressing over the salad and toss until evenly coated.
6. Taste and adjust seasoning as needed.
7. Cover and chill for at least 30 minutes before serving.
Notes
Greek yogurt keeps the dressing creamy while staying lighter than traditional mayo-based versions.
Add extra lemon juice for a brighter flavor.
Store in the refrigerator for up to 3 days.
