Description
Healthy Greek pasta salad is a bright and refreshing cold pasta salad packed with cucumbers, tomatoes, olives, feta, and a light lemony Greek dressing.
Ingredients
12 oz whole wheat penne or rotini pasta
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup bell pepper, diced
1/4 cup red onion, finely diced
1/3 cup Kalamata olives, sliced
1/2 cup feta cheese, crumbled
2 tbsp olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice
1 tsp Dijon mustard
1 tsp dried oregano
Salt, to taste
Black pepper, to taste
2 tbsp parsley, chopped
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente.
2. Drain the pasta and rinse under cold water until completely cooled.
3. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, salt, and black pepper.
4. In a large bowl, combine the cooled pasta, cucumber, cherry tomatoes, bell pepper, red onion, olives, feta, and parsley.
5. Pour the dressing over the salad and toss gently to combine.
6. Taste and adjust the seasoning if needed.
7. Refrigerate for 20 to 30 minutes before serving.
Notes
Use whole wheat pasta for more fiber.
Add chickpeas if you want extra protein.
