Description
Lemon garlic pasta salad is a zesty pasta salad featuring a bold lemonโgarlic vinaigrette tossed with crisp vegetables and farfalle or rotini pasta.
Ingredients
12 oz farfalle pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
3 tbsp olive oil
2 tbsp lemon juice
1 clove garlic, minced
Salt, to taste
Black pepper, to taste
Instructions
1. Cook pasta in salted boiling water until al dente, then drain and cool.
2. In a bowl, whisk olive oil, lemon juice, garlic, salt, and pepper.
3. In a large bowl, mix the cooled pasta, tomatoes, cucumber, bell pepper, onion, and parsley.
4. Pour the lemon garlic dressing over the salad and toss until evenly coated.
5. Chill for 20 minutes before serving.
Notes
Adjust garlic to your taste.
This salad pairs well with grilled chicken or fish.
