Description
Mediterranean Italian pasta salad with artichokes is a vibrant cold pasta salad filled with olives, tomatoes, mozzarella, and marinated artichokes in a tangy herb dressing.
Ingredients
12 oz penne or rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup black olives, sliced
1/2 cup Kalamata olives, halved
3/4 cup marinated artichoke hearts, chopped
1 cup mozzarella pearls
1/4 cup red onion, thinly sliced
3/4 cup Italian dressing
2 tbsp parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente.
2. Drain the pasta and rinse under cold water until completely cooled.
3. In a large serving bowl, combine the cooled pasta, tomatoes, cucumber, black olives, Kalamata olives, artichokes, mozzarella, and red onion.
4. Add the Italian dressing and toss until everything is evenly coated.
5. Season with salt and black pepper to taste.
6. Top with parsley and chill before serving.
Notes
Marinated artichokes add lots of flavor.
Use feta instead of mozzarella for a different Mediterranean twist.
Serve chilled for best texture and taste.
